As a young boy, I fondly remember the aroma of real Spanish saffron cooking up in my grandmother’s kitchen. As I grew up I also recall her being quite secretive about both where she stored her treasured saffron and how she used it as a spice and coloring for her extraordinarily delicious paellas. My mother and I would use my grandmother’s handwritten paella recipes, with her special instructional notes, as we strived to replicate our family’s original paellas.
