Our Chef Gio Kitchen Chefs expertly produce this delicious pork dish so that the skin is a perfectly salted, crispy pork rind with soft, succulent, tasty meat. This Chef Gio specialty is a full-service offering. Our Chef arrives at your location fully equipped with our Caja China, your whole pig and all of the equipment. ingredients and materials required to perform our “Live Cooking”  of your whole pig.  Our Chef slow cooks, basting as he or she goes with the world’s best Caja China brand seasoning. Your Chef Gio Whole Pig in Caja China feast  comes complete with moros, a famous Cuban dish served at virtually every Cuban restaurant. It is the Cuban version of rice with black beans, a dish found throughout the Caribbean, the US Southern States, and in Brazil. First, we boil our fresh beans in water. When the beans are sufficiently cooked we add onions, garlic, bell pepper, oregano and bay (laurel) cooked as a sofrito beforehand and added to the dish to give additional flavor. We mix our beans with perfectly cooked premium, long-grain white rice to create our moros side dish. We accompany your pork and moros with boiled yuca (cassava) with its special garlic mojo and maduros, (fried, ripe/sweet plantains).
